and many more awards ! with Today's post I'm taking a break from blogging for some time as I'll be going on vacation for more than a month or so ! I'll surely try to post once in a while whenever I get time :-) In the mean time , you guys keep rocking !!! I'm going to MISS YOU ALL !
Today I have prepared a meal of Prawns Pulao (with lotz of veggies) , Tawa Fish Fry and Mixed Raita . I was thinking of trying this wonderful Recipe of Prawns Pulao for quite some time, but when I saw Reshmi's space last week , she made a wonderful Paneer Tawa masala , I was so tempted by her amazing clicks , I thought of trying the Tawa Fish Fry recipe as well and a Mixed Raita to go along with it .
Prawns Pulao
Ingredients :
- 15 to 20 medium sized prawns
- 2 cups Basmati rice
- 1 and 1/2 cup veggies, chopped ( I have used carrot, beans, green beans, Corn kernels )
- 1 cup onion, chopped
- 4 to 5 green chillies, slit lengthwise
- 2 to 3 cloves of garlic
- 1, 1" cinnamon stick
- 1 Bay leaf
- 1 tsp poppy seeds
- 1 tsp coriander seeds
- 1/2 tsp Black Cumin seeds (Shahi Jeera)
- 1 tsp turmeric powder
- 1/2 tsp of red chilli pwoder
- 1/2 cup of grated coconut
- a little more than 1/2 cup Cilantro, chopped
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp Oil/Butter
Preparation :
- Cut and devein the prawns.Marinate them with red chilli powder, 1/2 tsp turmeric powder and salt for about 20 minutes.
- In the meantime ,soak the basmati rice in cold water for about 10 minutes. Cut the veggies and keep aside.
- Dry roast the poppy seeds and coriander seeds for couple of a couple of minutes or until you get a nice aroma. In a blender , add the grated coconut, green chillies, garlic cloves , chopped cilantro,poppy seeds and coriander seeds with 2 tbsp of water and blend into a fine paste.
- Heat Oil/Butter in a non stick skillet, add black cumin seeds, once it starts to sputter, add the cinnamon stick, bay leaf with chopped onions and the veggies and fry for 2 to 3 minutes, next add the prawns and fry for another 2 to 3 minutes.
- Then add the green paste and 1/2 tsp turmeric powder, mix well and let cook covered on medium low heat for another 3 to 4 minutes or until the raw smell of coconut goes away.
- Next add the basmati rice and fry for a minute or so , add 3 cups of water ( add 1 and 1/2 cups water for every cup of basmati rice used ), add salt and let cook covered on low for 12 to 14 minutes.
- Remove the skillet from the heat and let sit undisturbed with the lid on for at least 5 minutes . Remove the lid , add a tbsp of lemon juice and fluff the rice gently with a spatula.
Tawa Fish Fry and Mixed Raita
King Fish / Pomfret is best for this Fry recipe. I have used Salmon , as I wanted to finish the last batch of fish in my freezer :-)
- 1 lb. Salmon , cut into 3" pieces (You can use any white fleshed fish of your choice )
- 2 tbsp lemon juice/ white vinegar
- 1/2 tsp carom seeds (ajwain)
- 1 tsp cumin powder
- 1 tsp pepper powder
- 1/2 tsp kashmiri chili powder (optional, if you want to increase the heat)
- 1 tsp tandoori chicken BBQ mix ( I like using this spice mix in most of my non veg dishes, even fish because of its color and flavor, if you do not like to use it, add 1 tsp garam masala and 1/2 tsp turmeric power instead)
- Salt , to taste
- 2 tbsp Oil
Ingredients for Raita :
- 2 cups of thick curd
- 1 cup red onion, chopped
- 1/2 cup tomato, chopped
- 2 to 3 green chillies, chopped
- 3 tbsp Cilantro chopped
- 1/2 tsp minced ginger
- 1 tsp Chat masala
- Salt, to taste
- Wash and cut the fish thoroughly. Marinate the Fish pieces with the ingredients as mentioned above. Keep refrigerated for an hour .
- Heat Oil in a wide bottomed non stick tawa (skillet) , add the fish pieces and shallow fry on medium heat for 2 to 3 minutes on each side or until it turns golden brown on both sides.
Preparation of Raita :
- Chop all the veggies as mentioned above. Combine the veggies with curd , minced ginger, chat masala, salt with 3/4 cup of water. Let sit in the refrigerator for 15 to 20 minutes for all the flavors to blend well.
